Double IPA
Our brewing apparatus is assembled in a specific way for each of the beers that we create in our brewery. Sometimes this is a simple configuration, and sometimes it is more complex. We infuse whole cone Amarillo hops at 3 different points in the brewing process when we brew Apparatus. We keep the body of the beer as light and crisp as possible to allow the layers of hops to shine through. Fruity esters created by our yeast during fermentation accentuate the hops.

Kettle Soured Red Ale
The sweet, robust maltiness profile of this beer is balanced by acidity resulting from a brief fermentation with Icelandic yogurt cultures. We then ferment this beer again with a more traditional ale yeast, and add cherry and apricot toward the end of fermentation. Brief conditioning on pickled oak chips adds

dimension to the acidity profile of this beer.
